02 - BEHIND THE SCENES

WHAT THIS COFFEE MEANS TO US
APRIL is the natural follow-up to the Caturra Nitro you had last month with ALCOVE 01.
We thought it was the perfect coffee for those first warm days, especially since we love this one brewed as a FLASH BREW too.
When Daniel asked Andres what his favorite co-fermented coffee was, he didn’t even hesitate: “April!!”
So here it is. Time to share it with you and let you enjoy it your own way!
WHAT’S THE “CULTURING” METHOD ALL ABOUT?
The culturing fermentation process is a technique developed by Café UBA (Julio Madrid & Andres Quiceno).
It involves using fruits, herbs, and spices together with the coffee, along with specific bacteria and yeasts that kick off metabolic reactions.
The result? Totally unique flavor profiles.
APRIL IS:
Coffee that’s been cultured and fermented with a mix of fruit (apricot) in a low-oxygen environment (a bioreactor) for over 144 hours.
It reminds us of: PEACH, APRICOT, RHUBARB JAM

HOW WE DRINK IT AT KOHI?
FLASH BREW! (Yeah, just like with ALCOVE 01!)
"Flash brew" is a manual brewing method where you cool the coffee instantly by brewing it over ice that you’ve added to your carafe before starting. The result is super refreshing, really complex, and it brings out those PEACH and RHUBARB notes beautifully.
Water: 88ºC
Ice: 150g

Serve in a glass with ice and enjoy!
