WHAT THIS COFFEE MEANS TO US
The relationship we have with Julio Quiceno and Julio Madrid is very meaningful, as it represents the first coffees we ever purchased directly from the producer, without any intermediaries. Not only is the relationship valuable, but the coffees that come from it are also incredibly well balanced.
Co-fermentation often takes up a lot of space with some producers, but with them, the approach is always very well-measured. They manage to preserve the terroir of each lot while adding a touch of sparkling confetti!

WHAT IN THE WORLD IS BABY BLUE?!
Baby Blue is crafted using the “Culturing” fermentation process by Julio Quiceno, where the coffee ferments with pineapple and selected microorganisms under limited oxygen for over 144 hours. This mixed fermentation leverages the activity of yeasts and bacteria to trigger complex metabolic reactions, resulting in a cup with layered spices and a uniquely expressive aromatic profile.
It’s the perfect flavor profile to pair with your December festivities.
